Bean Soup with Chorizo

When I was small, a humble sour bean soup has always been my favourite. I would always ask for it at my grandma’s. I’ve tried to make it many times with fresh beans. To be honest, the fresh beans are very hard to digest for me. Even though I am not a huge fan of ‘tins’, it really works out for me, so I can enjoy the beans anytime I want to. The combination of all the spices, tomatoes and chorizo works so well together. Moreover, it is very fast and easy to make – Bean Soup with Chorizo. A beautiful winter soup with a lovely twist.

Shopping List

Olive oil
1 red onion, finely chopped
2 chorizo hot sausages, sliced
4 cloves of garlic, crushed, peeled and finely chopped
2 medium tomatoes, washed and diced
1 tin of good quality white beans in a tomato sauce
1 tin of red beans in a salted sauce, rinsed (liquid removed)
1 liter of a good meat stock
1 teaspoon of smoked paprika, ground coriander, chili, cayenne pepper
A handful of Fresh parsley, washed and hardly chopped
Sea salt and ground black pepper
Crème fraîche and fresh bread to serve with

Bean Soup

Instructions

Heat up one tablespoon of olive oil in the heavy based casserole pan on high heat.
Add onion, chorizo and garlic. Sauté all on medium heat until nicely golden, for about 5 minutes. Next, stir in the tomatoes and all the beans (remove the liquid from the red beans, white ones leave with a delicious tomato sauce).

Bean Soup

Pour one liter of a good quality meat stock. Flavour it up with all the spices (paprika, coriander, chili and cayenne pepper). Taste and taste. Season accordingly.

Finish with the fresh parsley.

The Bean Soup with Chorizo is delicious with a tablespoon of crème fraîche, some extra parsley and fresh bread. Dobrou chuť!
