Luxurious Rhubarb Slice

This dessert belongs to a heavenly category, especially in the season during the spring time – Luxurious Rhubarb Slice.
I love rhubarb. I remember it from my childhood and I have never paid big attention to it. Moreover, it is one of the pleasures for adults. Children can definitely enjoy few processed pieces, however, nutrition wise it is not that healthy.

Rhubarb, officially a vegetable, has a large use in the culinary world. My favourites are desserts, meat pairings and marmalades, especially in combination with strawberries. This time I present you a new recipe, but a real blast for any kind of party or a tea session. You really must try it!

Total Time: 1 hour 15 minutes

Shopping List

The Crust:
400g of plain flour, sifted
1 teaspoon of baking powder, sifted
A pinch of sea salt
2 yolks
200g of butter, soft in cubes
2 splashes of cold water

The Filling:
700g of ripe rhubarb, washed, cleaned and diced
200g of icing sugar, sifted

The Topping:
3 egg whites, lightly whisked
150g of icing sugar, sifted

Instructions

After you prepare all the ingredients, preheat the oven to 160 degrees.

The Crust

In a large mixing bowl place flour with baking powder and a pinch of salt.

Add yolks and butter and start kneading a firm dough.

Pour in a bit of cold water, in total around 2 splashes. Continue kneading until you get a beautiful homogeneous texture.
Then, transfer it directly into a lightly greased baking tray (I used 26cm pie pan). The dough isn’t too buttery, therefore, it is easy to work with. However, it is really important to get a firm texture, which requires some strength.

The Filling

In a small bowl mix the rhubarb with 200g of icing sugar. First, add one-third of rhubarb and cover with a part of icing sugar. Continue until you have it all processed.

Mold The Filling all over the surface. Place in the oven and bake for about 35 minutes until it dries a bit and rhubarb darkens a bit.

The Topping

Few minutes before taking it out, lightly whisk the egg whites on low-speed. Increase the speed for a bit.
Once the egg whites start running, add sugar, a half at a time. Continue whisking until it becomes a shiny texture, not into peaks just yet.
Pour it over the slice and smoothen with a spatula.

Back in the oven for about 5-10 minutes. When it gets a bit golden, try the crust on the top. If it cracks, it is done. Take it out, let it cool down a bit and serve. Yummy!
