While I am writing this post, I am enjoying this funky treat myself. My new Pinky Beetroot Spread is full of wonderful vitamins, energy and has an incredible taste.

I’ve got inspired in my Slovak favourite cooking show and I just had to go to a store and treat myself to it straight away: the combination of Beetroot Spread with cream cheese, Parmesan and fresh horseradish is to die for. It makes you feel good and fresh. As it was advised in the show, yummier bite is with rolled and chilled tortilla. Refrigerate and slice into heaven. YES!
Total Time: 15 minutes
250g of pre-cooked beetroot, hardly chopped
½ cup of goat cream cheese
A knob of butter
1 handful of Parmesan cheese, grated
A splash of lemon juice
2 teaspoons of horseradish
A pinch of smoked sea salt
Fresh bread and chives to serve with
Put all the ingredients into a blender: beetroot, cream cheese, butter, Parmesan, lemon, horseradish and sea salt. Blend until very smooth and taste. Season accordingly.
Serve on a piece of fresh baguette, Kaiser roll or any bread of your preference. Sprinkle with fresh chives and enjoy!
Makes 5 serves.
