What more to add to it - beautiful and springish - Seasonal Radish Soup. It is very light, fulfilling and fresh. The combination of honey, bacon and radish is just awesome. I definitely recommend it, and I should have made more of it. Ideally served with fresh bread and a glass of white wine. Enjoy!
Total Time: 20 minutes
A bunch of radishes, cleaned, washed, sliced and diced
A knob of butter
Few slices of bacon, diced
1 medium shallot, peeled and finely chopped
A splash of olive oil
1 teaspoon of honey
2 medium potatoes, peeled, washed, grated and diced
A handful of fresh parsley, washed and hardly chopped
1 litre of good strong stock
½ cup of double cream
Sea salt, ground black pepper
Fresh bread to serve with
Melt a knob of butter in a deep pan casserole on high heat. Radish in. Sauté for about 1 minute and add bacon and shallot.
A splash of olive oil in. Sauté for a couple of more minutes until it gets nicely baked.
Stir in the honey and roast until it gets nicely golden and you can smell the magic.
Add one chopped potato and a handful of fresh parsley. Mix.
Pour in 1 litre of stock, add a grated potato and cook on medium heat until the potatoes are soft, for about 15 minutes.
Afterwards, stir in some double cream and taste. Season accordingly with salt and pepper. Done.
