Thanks to my friends and family, travels and visits, I always get enough of food inspiration. More than I can handle, but I am still thankful for that. A very dear friend from Prague offered me this incredibly simple blue cheese. I topped it up with 2 alternatives. Easy Cheesy Spreads - serve with fresh veggies and baguettes. Cheers!
Total Time: 20 minutes
The Blue Cheese Spread:
100g of hard blue cheese, finely grated
½ cup of plain yoghurt
A pinch of sea salt and black pepper
The Garlic Mustard Cheese:
50g of semi-hard cheese (I used Gouda), finely grated
3 tablespoons of good quality mayonnaise
2 cloves of garlic, crushed, peeled and finely grated
½ teaspoon of Provencal herbs
1 teaspoon of Bavarian sweet mustard
The Smooth Brie:
50g of good quality brie cheese, grated
1 handful of sun-dried tomatoes, finely chopped
1 clove of garlic, crushed, peeled and finely chopped
3 tablespoons of mayonnaise
1 handful of fresh basil, finely chopped
1 bunch of celery, carrots, cucumber and fresh bread to serve with
The Blue Cheese Spread
Place all the ingredients into a small serving bowl: blue cheese, yogurt and a pinch of salt and pepper. Mix well and taste. Done.
The Garlic Mustard Spread
In a small serving bowl put the cheese, mayo, garlic, Provencal herbs and mustard. Give a good stir and taste.
The Smooth Brie
Mix all the ingredients in a small serving bowl: brie, sun-dried tomatoes, garlic, mayo and basil. Taste.
Cut slices of desirable breads and place them in a bowl. You can either layer the crackers/bread with the spreads or serve them just like that on side. No limits to imagination. Nice snacks to accompany the spreads are also homemade nachos or my party cheesy sticks. The more cheese, the better. Get inspired and enjoy with a glass of dry sparkling wine. Yummy!
Makes 3 medium bowls of spreads.
