I used to be “a no meat-eater” for about 11 years. I don’t like to use the term “vegetarian” as I never really followed the veggie nutrition. I like to say I was focused on different products for a while.
Anyway, during my stay in Bulgaria, I got inspired by a very lovely salad, which I used to order in The Pizza Restaurant УГО accompanied with a garlic bread. My Avocado Salad with a Honey Mustard Dressing is ideal for a fresh, light and yummy fast dinner or lunch. For more information on healthy benefits of avocado, click here.
Total Time: 15 minutes
3 handfuls of Rocket Salad (or any green salad of your liking), washed and hardly chopped
1 ripe avocado, peeled and sliced
6 sun-dried tomatoes, diced
2 shallots, halved and sliced
2 handfuls of Parmesan Cheese, chopped and grated
The Honey Mustard Dressing:
1 tablespoon of olive oil
½ of lemon juice
1 teaspoon of Dijon Mustard
1 teaspoon of honey
Sea salt and black ground pepper
Place the Rocket into a salad bowl. Gently stir in avocado, tomatoes and shallots.
In another small bowl mix well all ingredients for The Honey Mustard Dressing by using a balloon whisk. Spread it all over the salad.
Finish with the Parmesan Cheese. It is lovely with toasts or fresh bread accompanied with a glass of white wine.
Makes 2 serves.
